Breakfast like Grandma used to make.

Irish Oatmeal, steel cut oats, cooked slowly in milk, with apples, raisins, and  a touch of honey. Sprinkle cinnamon and toasted nuts just before serving. Add cream or extra milk on the side.  Nothing else will satisfy you as this hot bowl of cereal with NO Preservatives.

I discovered steel cut oats late in my life.
You might have known about them all along, if you had an Irish grandmother.
Give yourself a good half hour to get this on the table, following the instructions on the can.
You can purchase steel-cut oats in the bulk section of your grocery store. The ratio is four parts of water or liquid,  to one part oats.

I make a double batch and freeze the extra in individual Corelle bowls.  On days when I'm in a hurry, I pop a bowl in the microwave and within minutes, I have a hearty breakfast.

Get your morning going.

Most mornings, I want nothing more than a strong cup of coffee. If I lived alone, I wouldn't even think  about breakfast until mid morning when my stomach would start growling, and by then, I would be too weak to eat anything, or so hungry that I'd eat the proverbial horse.

This is a one pan dish, easily cooking while coffee is brewing and you are brushing your teeth.
It consists of three items, plus olive oil and salt and pepper.
It comes easily on the table and it can be served with sausages, or eggs, or both.

Saute slices of onions, potatoes and zucchini in olive oil until soft. Add salt and pepper and any fresh herb you like at this point.
Add one or two eggs per person in the last three minutes of cooking.
Cover and turn off the pan. The eggs will  cook in the residual heat and can be soft or hard, to your liking, about two-three minutes of time.

Try to find this in any restaurant!

Serve with toast.

Fuel Up!

Since we retired, we never skip breakfast.
Sure,  now we do have time to have a proper breakfast. It's true.  Time is a dear commodity.

Well, it's Saturday. You too can have a proper breakfast.

Here is scrambled eggs, with cheese,  over warmed up tortillas. I added avocado slices and homemade salsa.  I could have substituted sausage for eggs, even chicken slices.

If you are still in a hurry, prepare the scrambled eggs the night before, roll in the tortilla and save. In the morning, warm it up in the microwave, and run off to work, school or...

Fuelling up in the morning is a smart idea.
