Going meatless?

Beginning this week, I prepared meals with no meat.




Pizza tasted light and flakier without all the extra toppings.
Burgers were savory with portabello mushrooms standing in for beef.
Pasta with peas and scallions never missed its pancetta.

And what happened to my appetite? It slowed down. My digestion was easier. Even my sleep patterns felt lighter.

I might just do meatless more often.

  1. I love our meatless meals and have several every week. summer of 2012 when we were looking at our rapidly shrinking resources before the work dam broke, we went meatless for months. didn't really miss it but got awfully tired of squash.

  2. You're so right, Rosaria! I always feel better when I eat a largely vegetarian diet. Why don't I remember that during the holidays? Thanks for the reminder!

  3. I think its a good idea, but I'm not an adventurous eater. If I cut out meat, I'd probably wind up eating candy bars and twinkies. I'm not that fond of vegetables.

  4. As an almost-lifelong vegetarian I find that for me, it's cheese I need to cut back on. Definitely time to get back into healthy foods now Christmas is over!
