Quick and Easy Beef Tacoes.


Beef, onions, green beans, peppers, zucchini, a touch of cumin and a dollop of fresh salsa all wrapped up in a a warm tortilla.

Fresh salsa: chopped tomatoes, cilantro, roasted peppers, lime juice, salt and pepper and chunks of avocado.

  1. YUM! Your salsa looks wonderful. Actually, I was just thinking of making a variation of this recipe using shrimp. I love the shrimp tacos we get at a local place, but have stopped going there due to it not being that clean lately.

  2. I do use shrimp as well. I buy mine frozen, so I always have a batch on hand.

    You can use coleslaw or any shredded fresh vegetables to accompany your protein.

    Making your own salsa may not save money, but it will improve your mood.

  3. I made my first ever fresh salsa last week following the directions you had on the blog some months ago (now printed out and in my recipe file.) It was a big hit with the spouse.
