YUM! Your salsa looks wonderful. Actually, I was just thinking of making a variation of this recipe using shrimp. I love the shrimp tacos we get at a local place, but have stopped going there due to it not being that clean lately.
I do use shrimp as well. I buy mine frozen, so I always have a batch on hand.You can use coleslaw or any shredded fresh vegetables to accompany your protein. Making your own salsa may not save money, but it will improve your mood.
I made my first ever fresh salsa last week following the directions you had on the blog some months ago (now printed out and in my recipe file.) It was a big hit with the spouse.
