Dr. Joel Furhman does a two hour presentation on PBS on the value of eating vegetables to allow your body to naturally heal itself.
His main point: Make salad your main meal.
Include these ingredients to maximize health benefits:
1. Greens
2. onions
3. mushrooms
4. beans/berries
5 seeds and nuts
My favorite salad is pictured above: Tabouli.
Begin by pouring a cup of boiling water on one cup of bulgur*
Let the mixture sit on a counter for a half hour.
Then, add 3T of olive oil, the juice, and zest of one lemon, salt and pepper to taste. Stir and refrigerate for one hour.
Add one cup of chopped mint, one cup of chopped parsley, one cucumber, diced, two tomatoes, diced, and half a red onion, diced.
Mix and chill until you are ready to eat. It travels well too.
*bulgur is a grain used mostly in Middle Eastern Cuisine. Add a dash of cumin for a more authentic taste,
