Blueberries all day.


I made these beauties yesterday, for Hubby's birthday. The recipe is a variation of Alton Brown's from The Food Network, adapted so both he and I can eat these.

Ingredients:
12 1/2 ounce of cake flour ( I used whole wheat pastry flour)
1 t baking soda
2 t baking powder
Heavy pinch of  salt
1 C sugar (I used Splenda)
1/2 C vegetable oil (I used olive oil)
1 egg
1 C yogurt
1 1/2 C fresh blueberries (frozen o.k)
Vegetable spray for the muffin tins

Directions
Heat the oven to 380 F
You'll need three bowl, two big ones, one small one.
In a large bowl, sift together flour, soda, powder, and salt.
In another bowl, whisk the sugar, oil, egg and yogurt. Add the dry ingredients reserving 1T of the flour mixture.
Toss this tablespoon of flour in the small container with 1/2 C of blueberries and set aside.
Stir mixture in the big bowl for a count of 10. Add 1C blueberries to the mixture and stir 3 more times.


Using a medium scoop, add the mixture to greased muffin pans.
Sprinkle the remaining 1/2 cup of berries on top of each muffin and press down slightly.
Increase the oven temperature to 400F and bake for 20-25 minutes, rotating pan halfway through.  Remove from oven and turn out, upside down on a tea towel to cool completely.

Serve immediately or store in airtight container.

  4. Yum. These look just wonderful. I've not cooked with Splenda. I need to start. Does one use a cup of Splenda in place of a cup of sugar?

  7. I calculated the calories for each muffin: 140
    That's half what a commercial muffin will have, and none of the healthy benefits you will get from the yummy fresh berries you put in.

    I grow blueberries. You can too! They are easy and require an acidic soil which you can work in with the assistance of additives. I fertilize mine in the early spring and enjoy the clumps of goodies about now and through September since I have fruiting varieties that produce at different times.

    If you do want to plant them, do so in September and by next spring, you too can see some budding going on. I have added to my stash every year. We now have enough-if I'm quick to put a veil over the clusters before the birds pluck them out-for a variety of dishes if I don't eat them right off the bush.

    Blueberries are one of the five miracle food: blueberries, avocado, yogurt, olive oil, tomatoes.

    It's too cool for me to grow tomatoes successfully-though I try in the sunroom every year.

  8. It is a dickens of a year for gardening. I am a complete novice in this area, although we try every year, but even those I consider experts are having gardening woes. We've had NO rain and hot, hot days. Pickins' have been slim all around.

  10. Peace Like a River stole my heart. My son had it for his sophomore literature class and I would read through his books so I felt like I got my money's worth on all that I spent. This was such a treasure, I can't stop recommending it either. I would love to see it made into a "well done" movie.

  11. Sally, I have read so many wonderful new books through my children's exposure in college too. Now, when we visit each other, we borrow books and share all the good there is out there.

    In the same vein, Tinker, a marvelous memoir, won the Pulitzer.
