Easy does it!


Some ingredients make the meal!
I keep these things in my refrigerator:

Balsamic vinegar
Olives
Roasted Peppers
Capers

Today, a day before a major shopping for fresh food, I had to come up with an easy meal that could be prepared quickly.  The peppers were called to action. I stuffed  the peppers  and baked them all with crushed tomatoes and a dash of balsamic.

Ingredients:
One jar of roasted peppers
2 dashes of balsamic vinegar
1 small onion, chopped
2 cloves of garlic, mashed
2T olive oil
2T chopped parsley
4 links of Italian sausages, out of their casing
1 egg
1 small can of crushed tomatoes
1 C chopped mushrooms/crimini or button
1/4 C bread crumbs
1/4 C Parmesan cheese

Remove the sausage from their casing,pull apart  and saute' in olive oil with mushrooms, garlic and onions. When  browned, remove from the pan and cool. Add the chopped parsley, egg, bread crumbs, cheese, and the vinegar. Mix well. Open the peppers carefully and stuff them with above mixture. Place in a flat casserole, add tomatoes over the peppers and another dash of balsamic. Bake in a pre-heated  375F oven for twenty-thirty minutes or until all heated through.

Serve with crusted bread and a side salad.
