All American Meat Loaf.

Nothing else makes you feel comfortable as meat loaf. It is a classic American invention, a substitute for fancy pate', put together easily with scraps of meats.
Nowadays, it is hard to find in a restaurant. To have a thick slice of meatloaf, mashed potatoes, gravy and green beans, you need to cook your own, and freeze any leftovers for days when you are hankering for comfort food.

Ingredients:

2lbs of ground chuck or other ground meat
1lb of pork sausage
1 3/4 C of bread crumbs, saltine crumbs or oatmeal flakes
1C chopped parsley
3/4 C Worcestershire Sauce (Lea & Perrins)
3 eggs
1 C chopped onions
2T garlic salt
1T ground pepper
3 strips of bacon or 3T of BBQ sauce

Combine all ingredients except the bacon.  Press down into a loaf pan; Add the bacon strips across the top or the BBQ sauce.

Bake at 350F for one hour and twenty minutes.

Cool in the pan. Tip the pan and remove  the drippings. You can use these to make gravy for your mashed potatoes.
Slice and serve the loaf with mashed potatoes, gravy, and your favorite vegetables.

Or, make sandwiches, with arugula, a dab of BBQ sauce.

If you have any leftovers, freeze in single servings.

  5. I will try it with the pork sausage. You are so right about finding good meat loaf any more. It is the ultimate comfort food. My husband really loves my choice for dinner when I make meatloaf.

  6. I like it that you added arugula for a sandwich. Good call. Meatloaf is one of my favorite meals and I usually make scalloped potatoes or just baked if I'm in a rush. You're right, meatloaf cannot be bought in a restaurant nor can meatballs. And do you notice how nobody seems to make them from scratch anymore?

  7. Yvonne, I will have to make meatballs from scratch, soon, to have with pasta, and to have in sandwiches the day after.

Retired: I guess pork sausage is not that common to mix with meat loaf. Our beef is very lean, from grass fed beef, and adding pork add that level of flavor that is authentic meal loaf.

Natalie--How do you make it down under?

Suz--Bacon, for the same reason above. Our beef is too lean.

Eva--If not with pork, what other meat do you use?

Patricia--Notice, this is All American. No Italian spices here, except for parsley, the Italian kind.

Thanks for visiting, ladies. Happy eating.

  8. p.s. Yestesday's meatloaf, with the addition of salsa, beans and cheese became a burrito today.
I don't think I'll have any leftovers to freeze.
