Food Rule Number Five: Cook What You Have on Hand


Spaghetti  Carbonara, adapted for this occasion to Fettuccine Carbonara with fresh peas!
I had no pancetta for this one. So, I used bacon.  If  no pasta, I would have used rice or ...
I added extra egg yolks to the creamy sauce to give us more protein.
If I had other veggies, I would have added them.

The point is to improvise with what you have in your fridge or pantry. 
Most times, theresults will be just as good, if not better than the original recipe you were after..

  1. Note that I cook four servings at a time. Before I serve, I divide and refrigerate the rest. This way, we eat our smaller meals, and do not go back to finish the rest.

  5. Yes, Ellen! I hate shopping for just one or two things too. I bet lots of new recipes are concocted by people in the food business to use up an abbondance of some things.

  7. I love to cook this way, and this month, with a job transition and therefore tighter budget, I'm working at really using what's in the freezer and cupboard and trimming down the budget...it's actually kind of fun!

  8. Kathleen, Diana, yes, it's fun and creative. It tells the family that the magic is in the putting things together, not purchasing ready made stuff that will taste the same, time after time.
