Fall is coming and...


The garden has been neglected all summer; but, it has not stopped producing. It beckons me to pull out the strawberries, pick the blueberries, cut out the greens that haven't bolted.
Yes, Fall is coming and I'm spending time in the garden.

First, though, let's just enjoy the last days of Summer.
Orecchiette with wild greens and shrimp in a oil/garlic sauce.
Great hot or cold.

Here is what you need:
Orecchiette or any short pasta
mixed greens like broccolini, spinach, arugula, kale...
1lb of shrimp, shelled
2T olive oil
1T minced garlic
1T hot pepper flakes
1T chopped bacon or pancetta (optional)
2T Romano cheese

Saute garlic and  pancetta in olive oil in a big pan, until garlic is golden. Lower the temperature and  add shrimp, cut into small pieces. Add blanched greens.

Boil the orecchiette and save a Tablespoon of pasta water. Drain and add to the pan with the greens and shrimp. If too dry, add the reserved pasta water at this point.

Serve hot or cold with Romano cheese on the side.
