Granola bars.



I love granola bars for on the go snacks. They travel well, and are great any time of the day. The trouble with commercial ones is not just their calories, but their additives. So, I began to make my own all in one bowl, then pressed in one pan, and voila', 30+ minutes later, I have great tasting, healthy and portable granola bars.

Ingredients:
2 Cups of oats
1 C chopped nuts ( i prefer pecans)
1/2 C pumpkin seeds (use any favorite of yours)
1/3 C melted butter
2 Tablespoon of honey
1/2 C raisins or dried cranberries( use any chopped dried fruit you prefer)
1/3 C brown sugar (I substitute Splenda with no problems)
1/4 C flour (I substitute whole wheat pastry flour)
1 egg
1teaspoon vanilla

Start by greasing a 9X13 pan. Preheat oven to 350. Blend all ingredients  and pat down in the pan. The mix tends to be dry and crumbly. Keep patting down.
Bake for 25'
Cool before cutting into bars.  Wrap each bar in saran wrap and freeze until needed.
There will be some bars that will crumble.
Use this crumble to sprinkle on yogurt, cottage cheese, fruit pies.
