An apple a day.

These are home-grown apples, a variety that is tart and juicy. I freeze them in chunks and use them up all year long in both sweet and savory dishes. 
Whenever I need a bit of pick-me-up, I pull them out of the freezer.
Today's recipe is a chunky salsa to use as a side dish or dressing for meats and greens. I love mine on Farro salad, with cooked farro and lots of greens.

Salsa:

1 clove garlic, minced
1/2 jalapeno pepper, seeded and chopped
1 C cilantro leaves, chopped
1/2 C mint leaves, chopped
1 small onion, chopped
1 C diced apples (frozen apples o.k.)
2 teaspoon lemon or lime juice
1 T good olive oil

Combine and let sit in the refrigerator for a few hours.
The sweetness and tartness of the apples and the bite of onions and cilantro will add interest to your dishes.
