I'm ready
for summer,
for outdoor meals
and the scent of lavender
a table in the shade
a couch to lay on
with a
a glass of wine
and a fabulous meal.

My favorite meal to eat outdoors: Shrimp Scampi Pasta, and a cucumber-tomato salad
Shrimp Scampi: Put a big pot to boil for the pasta while you saute  a pound of medium shrimp in 2 T of olive oil, with two cloves of crushed garlic and a tablespoon of hot pepper flakes. 
When the pasta is cooked al dente, add it to the shrimp, and toss with a tablespoon of chopped parsley.

Enjoy al fresco with cucumber and tomato salad and plenty of crusty bread to soak up the juices.

  3. You are all invited come summer, June, July, August or September. These are the months of drought in Oregon, where everything will still be very green and lush, but no rain will disturb your outdoor pleasures.

    No, we still go out and enjoy the outdoors all year long, but summer months keep us out all day long. Imagine 69-75 degrees on this coast, and plenty of sunshine! Who can beat that?
