Old Recipes never die.


This is what I am cooking today!
I'm following WebMD closely for suggestions on eating better and healthier and I'm happy to report, the Mediterranean diet I grew up with still serves me at this age.

These are lentils and sausages.  You can use any kind of sausage, by the way. I prefer Italian, spicy links, cut up small, not whole.

Here is what you do.
 In  a deep casserole dish, saute' carrots, onions, garlic and celery until tender. Add rinsed lentils and vegetable stock to cover plus a couple of extra inches of liquid. Cook until lentils are tender.

 Cook your sausages  in a separate pan.  I prick my sausages, wrap them in paper towels and microwave them for a minute at a time until all the pink is gone. 

 Serve a bowl of lentils with one or two sausages  per person.

A green salad would round up the meal, as crusty bread and a glass of Merlot.

    This looks delicious... fan of lentils and sausages myself... think its a good idea for dinner tonight actually.
    Robyn is wonderful (wishing her well ...the world is a better place with Robyn!) so was delighted that you left the comment at homage blog... I have realised bit by bit how much see need to think deeply and read more broadly to understand even he simple seed and its current place in our world!

  5. I adore anything with lentils so I will have to try it. We usually make red beans and rice with sausage, but the lentils are better for you perhaps.
